This year’s new fish and meat tapas dishes

At the start of 2019 we decided to revamp the menu at our restaurant in Palma de Mallorca. Amongst all our concoctions, we have fused two delicacies; one from land and one from sea. We cross the Atlantic Ocean heading to Peru with a sea bream ceviche, sweet potato with ginger, seasonal fruit and fried banana and we continue our journey to India with some delicious Garam Masala lamb skewers, yoghurt sauce and coconut naan. Incredible international flavours which highlight the Cosmopolitan excellence of KOA.

Our tapas in Palma de Mallorca are just as delicious with or without meat. Examples of this are our four vegetarian options which we include in our menu that, without a doubt, fascinate all those who try them. The simplicity and effectiveness of our bread, toasted in our Josper oven with tomato, garlic oil and fresh basil is the perfect accompaniment for any of our tapas: a delicious tempered burrata cheese, roasted aubergine, basil gel, turmeric powder and a soy vinaigrette. We also have our international deluxe potatoes with Kimuchi No Moto aioli foam and a mint and coriander oil and to finish, two salad options: a three quinoa salad, with a pumpkin chutney, cucumber and mint vinaigrette and a fennel air and a roasted avocado salad with miso and lime, a corn puree and cherry tomatoes with ginger. Sounds tempting doesn’t it?

We also want to mention four tapas dishes which bring us great excitement when we create them. Amongst all of life’s little pleasure there are very few things as comforting as eating some great croquettes. At our restaurant in Palma de Mallorca we have some beef cheek croquettes with a citrus aioli. Completely irresistible. We also have a beef carpaccio, with ramallet tomatoes, truffle and pecorino cheese, with a very Mediterranean flavour; or our Mexican tacos filled with Iberian pork, guacamole, coriander and lime. To round things off we have our beef sirloin skewers with a cheese fondue, ideal for sharing.
