What are our star dishes for summer? In essence: salads. And just because they are a widely available type of dish that doesn’t mean that they need to be boring. At our restaurant in Palma de Mallorca we have a salad featuring three types of quinoa, a pumpkin chutney, a cucumber and mint vinaigrette with a fennel air, a delicious roasted avocado salad with miso and lime, a corn sauce and cherry tomatoes with ginger or a creation featuring tempered burrata cheese, roasted aubergine, a basil gel, turmeric powder and a soy vinaigrette. That doesn’t sound boring, does it?
Ceviche, carpaccio and tartar in summer
A great way to create a dish which is not just light but also fresh and which you can enjoy in summer is to use cold raw produce. With this concept in mind we would like to present three magnificent examples filled with flavour and freshness. Firstly, a seabream ceviche, with sweet potato and ginger, seasonal fruit and fried plantain which perfectly harmonises the flavours of the fish with the fruit; a beef carpaccio with ramallet tomatoes, truffle and pecorino cheese, filled with intense and deep flavours and finally a seabass and langoustine tartar, guacamole and Japanese dressing which we are sure will have your mouth watering.

Last but certainly not least, the final section of the summer dishes at our restaurant in Palma de Mallorca is our fish. Dishes prepared on our coals seem to be thought as something to avoid on hotter days, however the delicate nature of our fish dishes means that they are perfectly light and great for enjoying in summer. We have a salmon with yuzu-miso sauce and teriyaki vegetables, a hake skewer, a refreshing escalivada salad with roasted peppers, almonds, and mint and micro vegetables and lastly a tuna tataki glazed with a Kabayaki sauce, avocado and a pearl barley with coconut and parmesan.

And as always you can never go wrong with a great dessert in summer. Ice cream and chocolate are sure favourites during this season.
